Hey there!

We’re Arin & Genavieve Gilbert, the husband & wife team behind Violet Crown Coffee. Thank you for taking the time to visit our website and drink our coffee. Your support has meant the world to us!

In the beginning…

The dream of Violet Crown Coffee began to take shape while our family planned a move from Northern California to Austin, Texas in 2017. During that time, I had become close friends with Eric Schuler, a roaster and coffee curator, who was starting Feast Coffee with his family. His journey birthed a desire in me to produce a cup of coffee that would stand out amongst other competitors. I wanted to create a cold brew that tasted more like espresso with a rich chocolatey profile, that could be delicious black or pair well with cream. In addition, since I value connecting with customers, I wanted to make specialty coffee that could be produced within a few seconds so I could focus on conversation with them. The dream took shape: I wanted to create a creative coffee process that allowed me to have genuine, quality engagement with my customers.

The city of the violet crown

When we moved to Austin we had a nice long drive, so I began researching names for our business. I wanted to use a nickname for Austin, like Bat City Coffee or Capital City… although nothing seemed to resonate with the artistic nature of the brand I wanted to create. Then, I began reading about the violet crown, a phenomenon in Austin that occurs at sunset, which looks like something out of a painting.

From that point on I began to notice these beautiful sunsets, a pinkish purple glow at dusk, and felt like I was experiencing something special. Our desire is that the coffee we serve you is something special, that every box of roasted coffee and every bottle of cold brew adds a bit of light to your day.
